Valves for scalded cheese

Description

Scalding valves are used to transform the matured cheese into cheese paste by melting it in brine.

The scalding and salting of the cheese is an operation that transforms the matured cheese cut into slices into a paste, which is kneaded and binds well so that it can be inserted into molds.

At the same time, by scalding, it also destroys a very large proportion of microorganisms, thus ensuring the obtaining of a suitable product from a microbiological point of view.

Scalding the house is done with hot water at a temperature of ~95aC, in two/three rounds, until the paste obtained can be processed by stretching.

We offer both electric scalding valves and scalding valves that use steam as a heating agent.
